Clear, deep, complex, fresh, and mineral on the nose with lemon, floral (blossom) and some caramel flavors; it is very fresh and subtle. Clear and mineral on the palate, incredibly fresh and vital, the 2007 Riesling Clos Ste Hune reveals great purity, finesse, and a lingering salty finish with a lot of tension and a very good grip. Really stimulating. A great dry Riesling. (SR) - WA

Very tight, minerally and reduced on the nose. Shows hints of flint and white pepper. Full-bodied, very dry and layered with some phenolic tension. It's so tight and holding back. - JS

Trimbach’s 2007 Riesling Clos Sainte Hune, one of my personal favorites, is a great wine to kick off the night. Endowed with total symmetry and a seamless personality, the 2007 is fat, rich and explosive from the very first taste. Bright citrus, white flowers and mint notes emerge from the glass, but the 2007 needs to lose some of its baby fat before it starts to shine. Today it is very pretty, but also quite young. (AG) - VM

Very elegant and refined, with good tension throughout from the racy acidity. Flavors of fresh-cut apple, white peach, lanolin, fleur de sel and blanched almond, with a hint of lemon zest, resonate through this tightly knit white, which should open up beautifully with time. (AN) - WS
